Chicken Caesar Salad Recipe

Ingredients:

  • 2 large chicken breasts (or thighs)

  • 1 large head of Romaine lettuce, chopped or torn

  • 1/4 cup (60ml) grated Parmesan cheese
  • 2 tbsp lemon juice (about 1/2 lemon)
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 anchovy fillet, minced (or 1 tsp anchovy paste)

Instructions:

1. Prepare the chicken:

  • Preheat your grill or oven to medium-high heat (about 375°F or 190°C).
  • Season the chicken breasts with olive oil, salt, pepper, garlic powder, and paprika if using.
  • Grill the chicken for about 6-7 minutes per side or until fully cooked and the internal temperature reaches 165°F (75°C). If using the oven, bake at 375°F (190°C) for about 20-25 minutes, or until cooked through.
  • Let the chicken rest for a few minutes before slicing it into strips or cubes.

2. Prepare the Caesar dressing:

  • In a medium bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, and anchovy paste if using.
  • Season with salt and freshly ground black pepper to taste.
  • Adjust the seasoning or add more lemon juice if needed.

3. Assemble the salad:

  • In a large salad bowl, combine the chopped Romaine lettuce and croutons.
  • Drizzle with Caesar dressing and toss until the lettuce and croutons are evenly coated.

  • Sprinkle with additional grated Parmesan cheese.
